2 c. frozen strawberries
1/3 c. water
3 TB sugar
1 squirt lime juice
1 c. butter
1 c. sugar
1/4 tsp salt
2 tsp baking powder
1 whole egg & 2 egg whites
1 tsp vanilla extract
1 c. cake flour
In a sauce pan, heat the berries, water, 2 TB sugar, and lime juice, on medium-high heat for about five minutes, or until thawed and warm. Transfer to blender and pulse ten times. Set mixture aside.
Preheat oven to 375. In a large mixing bowl, cream butter and 2 cups of sugar with an electric beater. Add baking powder and salt. Add eggs, egg whites, and vanilla. Add the flour.
Combine with strawberry mixture.
Bake in two round 9" baking pans for 25 minutes, or until a tooth pick inserted into the middle comes out clean. cool, frost, and enjoy! :)
